Leon: Bean to Cup saw sales hike

Leon restaurants has revealed that transferring over to bean to cup machines resulted in an increase in consistency, sales, service and a reduction in wastage.

Andrew Bulgaretti, head of coffee at Leon, and Martin Morell, corporate sales manager at Eversys, discussed how their partnership has seen benefits for the restaurant operator.

Bulgaretti said that, as a barista himself, the move over to Eversys machines was a “big challenge”. 

Bulgaretti said that, while trialling the new machines in a number of restaurants, the operator saw a “big improvement in coffee making and coffee sales.”

“In the last three years we have made a migration and now have Eversys in 60 restaurants and we are super happy,” said Bulgaretti.

However, he still faces challenges from baristas who ask why Leon is using a bean to cup machines.

Bulgaretti said his answer is: “As we are busy and we are getting busier every single day we cannot cope with the number of drinks we make.

“We can deal with a less skilled barista and we know that the extraction result is always good.”

He added that consistency, ease of cleaning and service were other benefits.

Morell said: “They haven’t reduced the level of barista training they have delivered in store. They still engage with their baristas to  make them understand the craft and the coffee knowledge.”

Another benefit of the system is the technology that can monitor when the machine was last cleaned, what the last drink was and what the grind time was.

Both Bulgarett and Morell were talking during a session at the conference at European, Coffee, Tea & Soft Drinks Expo.
