Barista training reaps rewards for non-specialist coffee operators

Pubs and restaurants are reaping the benefits of staff training barista style, as they fully realise the potential of coffee as big business, says independent trainer Emma Haines of Caffeina Consulting.

Haines, who is a SCA-qualified trainer who works with Paddy & Scott’s, London School of Coffee and various commercial and artisan businesses, told Coffee Business World that while speciality and commercial coffee operators had traditionally been seen as separate entities when it came to training, these days even businesses without a traditional focus on coffee were reporting the benefits of barista training to produce consistently well-made and excellently served coffee.

“Even if the outlet isn’t using speciality grade coffee, multi-skilling members of staff to be able to serve coffee well delivers customers a much better experience. Today’s consumers are expecting much higher standards from every sort of outlet, regardless of where they are or what the prime function of that venue is,” said Haines, who will be chairing the two-day business conference, sponsored by WMF and Schaerer, at the European Coffee Expo at London’s Olympia on May 22-23.

“Good coffee is coffee made well – it’s about the attention to detail,” she added. “When customers buy a coffee, whether it’s in a pub or high street coffee shop chain, they expect a good cup these days, therefore operators are seeing the value in multi-skilling their staffs to take on the role of barista. It doesn’t stop them still serving behind the bar or at the tables, but simply provides individuals with skills to deliver a great service across every element of the business.”

Businesses were reporting benefits too. “Where there has been staff training, operators are definitely seeing increases to their hot beverage sales,” added Haines.

While pubs and restaurants were upping their game when it came to coffee quality, commercial chains were looking to emulate artisan operators by broadening their offer. “Cold brew is a prime example of something that began in the artisan venue and is now being taken on by the larger chains,” said Haines.

“Sourcing is also very important to buyers now, as more than ever before people care about the provenance of their coffee. Knowing that the money they spend is helping to support those that grow, harvest and process the coffee is high on the list of priorities for many consumers.”

On Wednesday, Esther Gibbs, operations manager at Manumit Coffee Roasters join the impressive line-up of speakers on the second day of the conference. Gibbs’ presentation ‘Exploiting coffee- not people’ explains how Manumit Coffee Roasters is fighting slavery from bean-to-cup.

Later on Wednesday afternoon, Sam Harvey, general manger of Allpress joins Celeste Wong aka The Girl in the Cafe for an interview live on stage, followed by Julius Ibrahim, founder of Second Shot Coffee.
